Pumpkin Chocolate Chip Muffin or Bread Recipe
Ingredients
3 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
4 eggs
2 cups cooked or canned pumpkin
2 cups sugar
1-1/4 cups vegetable oil
1-1/2 cups semisweet chocolate chips
Preheat oven to 350 degrees.
1. In a large bowl, combine the flour, cinnamon, baking soda, and salt. Mix well.
2. In a second bowl, beat the eggs, pumpkin, sugar, and vegetable oil.
3. Stir the wet mixture into the dry ingredients just until moistened.
4. Fold in chocolate chips.
5. Fill muffin cups approximately 2/3 full.
Bake approximately 25 minutes or until toothpick inserted near center comes out clean. Cool on a wire rack.
Makes approximately 20 to 24 muffins.
***If making bread, pour batter into two greased 8-in. x 4-in. x 2-in. loaf pans. Bake at 350 degrees for approximately 60 to 70 minutes. Bread is done when a toothpick is inserted near the center and comes out clean. Remove from the pans after bread has cooled for 10 minutes. Let cool on a wire rack.***
